If you’ve been out and about recently and have been paying attention to where you’re walking you may have noticed lots of unusual white berries.
Tis the season for tea berry picking, a traditional Falklands pastime that we decided to turn our hands to.
Cue lots of windswept hairdos and a tasty smoko snack.
Tea Berry Cake by Eileen Hardcastle
Cake Mixture:
- 6oz Flour
- 1 Teaspoon Baking Powder
- 4oz Butter
- 4oz Sugar
- 3 Eggs
- 1 Cup Tea Berries
Method:
Cream butter and sugar, add the eggs one at a time. Add the sieved flour and baking powder gradually. If the mixture is very stiff add a little milk. Lastly, fold in the tea berries. Put in a greased tin lined with greaseproof paper. Bake in a moderate oven for about 45 minutes. If frozen this retains the flavour of tea berries extremely well.
